💬 “Sausage with swagger.”

🧂 Ingredients:
• 500g pork shoulder or minced pork (20% fat minimum)
• 2 tbsp Adobo Paste
• 1 tsp smoked paprika
• 1 tsp ground cumin
• ½ tsp ground coriander
• 1 garlic clove, grated
• 1 tbsp cider vinegar
• ½ tsp salt

🧰 Utensils:
• Bowl
• Gloves (optional)
• Frying pan

👨‍🍳 Method:
1. In a bowl, mix all spices, garlic, vinegar, Adobo Paste, and salt.
2. Add the pork. Mix with your hands until totally combined. It should be sticky, not loose.
3. Let it rest in the fridge for at least 2 hours, ideally overnight.
4. Fry a test piece to check seasoning.
5. Cook and crumble in tacos, eggs, rice bowls or stuff into casings if you’re fancy.
