MAKE CHICKEN ADOBO TACOS AT HOME

INGREDIENTS

For the Chicken


  • Boneless, skinless chicken thighs – 1kg
  • Adobo Paste – 100g
  • Sea salt – 6g


To Serve


  • Fresh tortillas
  • Chopped onions and coriander
  • Lime wedges
  • Salsa Roja (optional)

METHOD

Step 1 – Marinate the Chicken


  1. Mix chicken with Adobo Paste and salt.
  2. Cover and marinate overnight (or at least 30 minutes for a quick option).


Step 2 – Cook the Chicken


  1. Heat a pan over medium-high heat.
  2. Sear chicken thighs for 2 minutes per side until golden brown and slightly charred.
  3. Rest briefly, then slice into strips.


Step 3 – Build the Tacos


  1. Warm tortillas in a dry pan.
  2. Layer sliced chicken, onions, coriander, and Salsa Roja.
  3. Squeeze fresh lime juice over the top and serve immediately.
